Ingredients
  

  • 1/2 cup barley (washed and overnight soaked)
  • 1/4 cup chickpeas (overnight soaked)
  • 1/4 cup white beans (overnight soaked)
  • 1/2 cup Honey (can be replaced with same amount sugar)
  • 1/2 cup rose water
  • 1/2 cup currant (alternatively raisins)
  • 1/2 cup dried apricot
  • 1/2 cup figs
  • 1 apple (chopped)
  • 1/4 cup orange peel (chopped)
  • 1/2 cup almond (peeled)
  • 1/2 cup pomegranate seeds (optional)
  • 4 tbsp chia seed
  • 1/2 cup Milk

Instructions
 

  • Beginby rinsing barleyand legumes thoroughly under cold water. Soak them overnight or at least 6 hours.
    Insteadyou can use canned chickpeasand white beans with twiceamount of dried ones.
  • In a large pot, combine the barley,chickpeas, white beans. Add 8 cups of water and bring to a boil. Once boiling,reduce the heat to a simmer and cook for about 45 minutes or until the grainsand legumes are tender but not mushy. Add more water if needed during cooking.If you are using ready boiled or canned legumes, you can add them in last 10 minutes.
  • While the grain and legumes are cooking, chop thedried fruits into small pieces. Cut the apples and orange in small peaces. Set aside.
  • Add orange and little bit water in a saucepan to a boil. Once it boils,take it and rinse and add more water and repeat boiling and rinsing. Set ita side.
  • In a separate cup, combine honey/sugar with 2 cups ofwater, milk, rose water and chia seeds.
  • Add the chopped dried fruits to boiling legumesand barley and mix well. Boil 10 minutes.
  • Pour the liquid mixover the grain and fruit mixture and stir to combine. Stir everything togetherand let it boil for another 5 minutes or until ithas a pudding form.
  • Transfer the Ashure into serving dishes or a largeserving platter, and let it cool to room temperature. Then, cover and refrigerate it for a few hoursto allow the flavorsto meld and the puddingto set.
  • When serving, garnisheach portion with additional crushed walnuts, pomegranate seeds, and a sprinkle of cinnamon and cardamom if desired
