Start by peeling, pitting, and cubing the ripe mangoes. Make sure to remove as much of the fruit as possible. If you're using frozen mango, allow it to thaw slightly. If you are using ready mango pure, you use 1/4 cup per glass and drop honey.
In a blender, add the cubed mangoes and blend until you have a smooth mango puree. If you prefer a colder lassi, you can also add a handful of ice cubes at this stage.
Pour in the plain yogurt and milk. Blend again until everything is well combined and the mixture is smooth and creamy.
Add honey to the blender. Start with 2 tablespoons and adjust to your preferred level of sweetness. Blend once more to incorporate the honey.
Tear the fresh mint leaves and add them to the blender. This will infuse your lassi with a delightful hint of minty freshness.
Sprinkle in the ground cardamom, which will add a lovely hint of exotic flavor to your lassi.
Blend all the ingredients one more time until everything is well mixed. Taste and adjust the sweetness, if needed.
Refrigerate the mango lassi for about 30 minutes to allow the flavors to meld and to chill it further. Before serving, garnish with a sprig of fresh mint leaves and a pinch of ground cardamom for an extra touch of elegance. Pour the chilled Mango Lassi into glasses and serve immediately.
